When it comes to finding new recipes, Pinterest is my go-to. Literally ALL of my healthy (and boyfriend approved) recipes I’ve mastered I originally found on Pinterest. Cooking is so therapeutic for me. The whole process of finding a recipe, grocery shopping and putting it all together is so rewarding and fun. I just love being in the kitchen. I will admit though that I modify recipes pretty frequently to make them healthier and/or easier to make. Just because I love to cook doesn’t mean I have all the time in the world to do it! I cook about 5 nights a week but on the weekdays after a full day of work I want to make sure I have time to relax, play with my dog and watch my shows. (Current obsession: Mind Hunter). When I came across this recipe I knew it would be so perfect for me since I could just put my slow cooker to work while I’m gone during the day and still be able to get creative and have some fun with it. Not to mention that it’s super simple to make my jack-o-lantern macro friendly (no cheese, use brown rice, etc) and still perfectly filling. Yum!!
